Kimchi


So this is my first ever attempt at making kimchi! it's not the most authentic recipe, but I wanted a vegan version - the only ingredient from the garden was a few carrots! it would be great to grow some Napa cabbages next year to make this with! I will let it ferment for 5- 7 days then make some fried rice to eat it with! yummmmm
here is the recipe I used - I used brown sugar instead of coconut sugar and lime, orange juice combo instead of the pineapple juice and only 4 tablespoons of the red pepper flakes as that was plenty spicy for me. https://minimalistbaker.com/easy-vegan-kimchi/

Beautiful red cabbages make for hearty Winter cooking! I will be cooking a big pot of Borscht soon, with leeks and beets from the garden. Meanwhile, I've cooked up a big pot of Sweet and Sour Red Cabbage in the crockpot. almost as good as Grandma's coleslaw

One half head of precious red cabbage awaiting inspiration: Almost As Good As Grandma's Coleslaw, is the result: grated red cabbage grated carrot finely chopped red pepper 1 jalapeno pepper finely chopped red onion *** dressing: 1/2 cup apple cider vinegar, 1 Tb. sunflower oil, 1 tsp. honey, salt and pepper it's bright and colourful and crunchy - you can add some grated beet too, if you have one.
