Picked 20 pounds of ripe tomatoes, so made some spaghetti sauce - recipe here: https://www.tasteofhome.com/recipes/homemade-canned-spaghetti-sauce/

it seems like a lot of work but it made 4 x 2 pint jars
Will need to make a second batch or salsa with the remaining 10 pounds!
I had almost exactly 6 pounds, so tripled this recipe for roasted salsa verde: https://www.theyummylife.com/roasted_salsa_verde
QUINCE Adventure!Has it really been a whole year since I wrote? it's hard to believe! well, let me make it up to you by reporting on my Quince Adventure! I was given a huge pile of these luscious - smelling fruits, but no idea what to do with them. I also had no idea they are naturally covered in a grey fuzz, and thought it was mold! Luckily, it washes off readily, and then I got to peeling and coring - make sure you have a sharp knife, as these fruits are hard as rocks!
about 1/4 of the pile of quinces I was given!

The lovely quince is a member of the Rose Family native to South-West Asia, Armenia, Turkey, Georgia, northern Iran and Afghanistan. It thrives in a variety of climates and can be grown successfully at latitudes as far north as Scotland.
First thing I made was membrillo, a sweet quince paste similar to jam - we ate it with oatcakes and dutch cheese for a multi cultural mini feast. Also known as 'quince cheese', membrillo is a firm, sticky, sweet reddish hard paste made of the quince fruit, originating from the Iberian peninsula. It is known as marmelada across the Portuguese-speaking world and as dulce de membrillo
across the Spanish-speaking world, where it is used in a variety of
recipes, eaten in sandwiches and with cheese, traditionally manchego cheese, or accompanying fresh curds.

I then decided to make a huge pot of quince sauce, which is like a tart, thick applesauce and can be used anywhere you would use applesauce in a recipe - like a pecan coffee cake !

this basil is a beautiful eggplant purple - with a few lime green speckles and is a Genovese type and is delicious! Seeds are from WestCoast seeds - the pesto is purple! I made about 10 small tubs and froze it - will be splendid in the wintertime when we need a reminder of summer!

gumboot goddesshttp://www.blogger.com/profile/13643684395035499012noreply@blogger.com0tag:blogger.com,1999:blog-7812266764120241443.post-72122385246204509832017-08-12T17:26:00.001-07:002017-08-12T17:27:10.742-07:00Kimchi

So this is my first ever attempt at making kimchi! it's not the most authentic recipe, but I wanted a vegan version - the only ingredient from the garden was a few carrots! it would be great to grow some Napa cabbages next year to make this with! I will let it ferment for 5- 7 days then make some fried rice to eat it with! yummmmm
here is the recipe I used - I used brown sugar instead of coconut sugar and lime, orange juice combo instead of the pineapple juice and only 4 tablespoons of the red pepper flakes as that was plenty spicy for me. https://minimalistbaker.com/easy-vegan-kimchi/
I will be cooking and freezing big bags of chard to use during the Winter months and plan to make many pies when it's frosty outside!
Purslane is somewhat crunchy and has a slight lemony taste. Some people
liken it to watercress or spinach, and it can substitute for spinach in
many recipes. Young, raw leaves and stems are tender and are good in
salads and sandwiches. They can also be lightly steamed or stir-fried.
Purslane’s high level of pectin (known to lower cholesterol) thickens
soups and stews.
New to me is Andrographis ~ Andrographis paniculata is an erect annual herb extremely bitter in taste in all parts of the plant body. The plant is known in north-eastern India as Maha-tikta, literally "king of bitters", and known by various vernacular names (see the table below). As an Ayurveda herb it is known as Kalmegh or Kalamegha, meaning "dark cloud". It is also known as Nila-Vembu,
meaning "neem of the ground", since the plant, though being a small
annual herb, has a similar strong bitter taste as that of the large Neem

Trying something new this year! Fall Rye cover crop from West Coast Seeds - Rye is a soil builder. This cereal grain
grows quickly in the fall and survives winter weather even in zone 3. It
bursts into growth in the spring so try to turn under or cut back
before it reaches 30cm (12″). It is harder to turn under when it is 1m
(3′) tall. Extensive roots loosen topsoil and improve drainage. Plant
Fall Rye cover crop seeds in mid September for best results, but fall
rye will germinate as late as early November. Seed no deeper than 5cm
(2″).

Benefits:Cereal rye produces several
compounds in its plant tissues and releases root exudates that apparently
inhibit germination and growth of weed seeds. These allelopathic effects,
together with cereal rye's ability to smother other plants with cool weather
growth, make it an ideal choice for weed control.Tilled under is excellent mulch and prevents soil erosion.

Nutrient catch crop. Rye is the best cool-season cereal cover for
absorbing unused soil N. It has no taproot, but rye’s quick-growing,
fibrous root system can take up and hold as much as 100 lb. N/A until
spring, with 25 to 50 lb. N/A more typical (422). Early seeding is better than late seeding for scavenging N Rye increases the concentration of exchangeable potassium (K) near the
soil surface, by bringing it up from lower in the soil profile

It's super easy to make and super delicious - I added some red pepper flakes, too for heat.
Just put 1/2 cup of raw cashews, 1 Tb of miso and 1/2 cup of water in a blender or food processor. Saute 1 cup of finely chopped onion, 1/2 tsp cumin and a pinch of cayenne, add 6 cups of chopped kale to wilt. Pour in the cashew mixture and cook 3-4 minutes, stirring. Put everything back into the blender and add 2 Tb lemon juice, 1 Tbs of nutrional yeast and pulse ( don't puree). add salt and red pepper flakes to taste. Eat it hot with crackers etc.
All 6 of the orange cauliflowers matured at once (seemingly overnight!) and with a LOT of kale in the yarden, it was necessary to google kale + cauliflower and was happily surprised to find a plethora of recipes that incorporate both veggies!

I decided on kale and cauliflower kale chowder from Tomato boots: http://www.tomatoboots.co/cauliflower-kale-chowder/

I had some homemade broth in the freezer ( I try to always have it in there just for this reason!) I added potatoes to thicken the chowder instead of using flour, and put the cauliflower in at the end with the kale as it cooks so quickly. Served with some lime, green onion, cornchips and cheese, it is delicious!
