I was given the gift of 2 stunning Red Russian heads of garlic from a friend's bounteous harvest of over 200 bulbs. I'd been wanting to make this Indian Artichoke Hummus for awhile, so whipped up a batch, throwing in extra fresh garlic for good measure:
1 14 oz can artichoke hearts, drained
1 14 oz can of chickpeas, drained and rinsed
1 Tb rice vinegar
2 Tb apple cider vinegar
2 tsp maple syrup
2 Tb tamari
2 tsp garam masala
1 or 2 cloves of garlic
1 tsp fresh ginger
1 tsp nutritional yeast
salt and pepper
(I added some red pepper flakes and toasted sunflower seeds on top)
place everything in a food processor and blend till smooth.
