spotted a nice patch of Miner's Lettuce today!  aka Claytonia perfoliata. It can be prepped and eaten very much like spinach. I am going to try it in a salad with pomegranate dressing:
  1. 8 cups (1.9 l.) washed miner’s lettuce
  2. Radish slices for garnish
  3. ¼ cup (60 ml.) Pom Wonderful pomegranate juice
  4. 3 tablespoons (45 ml.) olive oil
  5. 2 tablespoons (30 ml.) balsamic vinegar
  6. ½ teaspoon (2.5 ml.) salt
  7. 1 teaspoon (5 ml.) dried thyme
